King oyster mushrooms with kale

  • 4 king oyster mushrooms, sliced
  • 1 bunch of kale
  • 1 shallot, finely diced
  • 2 cloces of garlic, minced
  • 3 tablespoons of soy sauce
  • 1 tablespoon of honey
  • 1 tablespoon of sesame oil
  • 1 tablespoon of vinegar
  • 1 tablespoon of grated ginger
  • Salt and pepper

Bring a pot of water to a boil. Trim the kale and blanch until just tender. Place the kale in cold water to stop the cooking and drain. Chop kale into bite size pieces. Combine soy sauce, honey, sesame oil, vinegar, ginger and salt and pepper. In a hot pan over medium heat, add neutral oil and add garlic and shallot until fragrant. Add kale and sauté for a minute and combine all the flavors. Remove to a plate and set aside while we cook the mushrooms.

Wipe the same pan and add more neutral oil over medium heat. Add the sliced king oyster mushrooms and fry until golden. Flip over to the other side. Drizzle the glaze over the mushrooms and keep basting the sauce over the mushrooms to thicken the glaze. Place kale on a plate and top with mushrooms.
