Black Fungus: They must be soaked in warm water prior to use (15 minutes for small, 30 minutes for large). It swells to many times its size. After soaking, the fungus is rinsed thoroughly and trimmed of the tough, gritty part where it was attached to the wood. Then, particularly if using the large variety, it is cut into pieces of a suitable size and shape before adding to a dish. They are prized in Chinese cuisine for its crunchy texture and therefore added to dishes only for the last few minutes of cooking. They are traditionally used in stir fries and soups. Enokitake: They can be eaten raw. They are traditionally used for soups, but can also be used in salads and other dishes.

King Oyster: They can be eaten raw. King Oyster do not have much taste. King Oyster can be grilled and used in other dishes.

Maitake: They are one of the wild mushrooms that can be eaten raw. They are safe as long as they are organic and free from chemicals. Cooking maitake mushrooms is quite simple. Simply cutting the mushroom into bitesize pieces is the best way to cook these. Dried maitakes must be soaked in water prior to cooking. Fresh maitakes can be cooked right away.

Portobello: They can be eaten raw. They are often used in pasta dishes, stuffed and grilled with herbs and spices.

Reishi: They must be boiled to kill any bacteria that grew on it during cultivation. Also, it is difficult for the body to absorb the active ingredients of raw Reishi.

It is recommended to take Vitamin C with Reishi as this will assist the body in absorbing the active ingredients in Reishi. Studies have shown that Vitamin C helps break down the complex polysaccarides into smaller manageable pieces that the body can intake.

Shiitake: They can be eaten raw. The mushrooms are often used in stir fries, soups, salads and pasta dishes. Fresh shiitake mushrooms can be kept in a paper bag under refrigeration. Dried mushrooms should be used in the same way as fresh shiitakes after being rehydrated in warm water.
