Onion and garlic soup

  • 1/4 cup olive oil 
  • 8 medium onions, sliced in fine rounds 
  • 3-4 garlic cloves, finely chopped 
  • 1.5 l vegetable stock 
  • 1 tsp. oregano 
  • Salt and black pepper

Saute the onions in olive oil, stirring until lightly golden. Add the garlic and cook for 1-2 min. Pour in the stock. Add the oregano and season with salt and pepper. Bring to a boil and simmer for 20-25 min.
