Quinoa salad


  • 1 cup uncooked quinoa
  • 2 cups of water
  • Cherry tomatoes
  • Dried abricots
  • Spring onion chopped
  • Parsley chopped 
  • 1/2 zucchini
  • 1 tablespoon olive oil
  • Lemon juice
  • Salt and pepper

Cook the quinoa. See how to prepare quinoa on the site. Let the quinoa to cool. Cut the cherry tomatoes in half. Cut the abricots and zucchini into smaller pieces. Mix the lukewarm/cold quinoa with the vegetable, abricots, oil and parsley. Add lemon juice, salt and pepper to taste.
