Turkey lasagna with cheese

  • 400 g fresh ground turkey
  • 100 g babyleaf spinach
  • 2 carrots
  • 1 medium size onion, chopped
  • 2-3 cloves garlic, minced
  • 1 tbsp. fresh basil, chopped
  • 1 tbsp. fresh parsley, chopped
  • 1 dl vegetable stock
  • 1 can tomatoes, chopped
  • 1 can tomato paste
  • Salt and pepper.
  • 50 g grated cheese
  • whole grain lasagna plates

Heat olive oil in a pan. Add onion, garlic and carrots cook for a couple of min. Add turkey and cook for about 10 minutes. Add plum tomatoes, tomato paste, and season with salt and pepper. Let it simmer for about 20 minutes. Stir in basil and parsley. Preheat oven to 200 degrees celcious.

Ladle 1/4 of the turkey mixture into a baking dish. Spread to cover. Add a pasta sheet, repeat untill the turkey mixture is used up. Sprinkle with a thin layer of cheese. Bake the lasagna for 30-35 min. Let stand about 5 minutes before servering.
