Heat the olive oil in a pan. Saute the garlic and onion. Add turmeric and pepper and saute it all in a couple of minutes and then add the spinach. The spinach must not be cooked for more than 3-4 min. Meanwhile on a different pan cook the king oysters for about 5 min. at low heat.
Mix the king oysters with the spinach right away. The dish is light and can easily be turned into a main course by adding broccoli, tofu or beans. Hereby adding protein to the dish.
